FAVORITE RECIPE LATELY: PEACH FOCACCIA BREAD

400 grams all purpose flour
268 grams water
80 grams fed sourdough starter
20 grams extra virgin olive oil
10 grams salt
mix to form shaggy dough, let rest 30 min
fold every 15 minutes or so - use your fingers to incorporate
bulk ferment room temp for 5-6 hrs
fridge overnight
transfer to cast iron skillet coated with olive oil and let ferment for another 6 hours at room temp - dough should be ‘overproofed’ and bubbly
preheat oven. use fingers to dimple the dough
add toppings - I like thin-sliced white onions, peaches, rosemary, herbs, parmesan or pecorino, generous sprinkling of salt and pepper
Bake at 500 degrees F for 25 min.
